1/2 cup rich cacao powder

4 scoops Bethany’s Pantry Cocoa Digestive Support Protein (no substitutions — this acts as a flour replacement)

1 teaspoon cinnamon

4 tablespoons coconut oil, melted

8 tablespoons water
Filling

Coconut butter (at room temperature)
Directions
Preheat your oven to 350°F (175°C).
In a medium bowl, mix together the cacao powder, Digestive Support Protein (DSP), and cinnamon.
Add the melted coconut oil and water, and mix until a dough forms.
Use your hands to form the dough into one large ball.
Place the dough between two sheets of parchment paper and roll it out evenly with a rolling pin.
Cut out circles using a cookie cutter or small glass.
Place the cookie circles onto a lined baking sheetand bake for 8 minutes at 350°F.
Allow the cookies to cool completely on the baking sheet (very important — they are delicate when warm).
Once cooled, transfer the cookies to the freezer until they are cold and firm (this helps with assembly).
Remove from freezer, and place a dollop of room-temperature coconut butter onto the center of one cookie.
Sandwich with a second cookie and repeat until all cookies are assembled.
